RECIPE: Cheesy Chicken, Broccoli, and Rice

This is one of Ashlyn's favorite meals and she also learned how to make it last year. She even learned how to use the pressure cooker to cook the chicken breasts! Since I've been busy with work, Ashlyn helped out and made this for dinner tonight...after asking for quite awhile if she could make it. It's a very simple recipe for a quick and easy meal. 

Cheesy Chicken, Broccoli, and Rice
Ingredients:
4 chicken breast halves, cooked and cubed
2 cans broccoli cheddar soup
1 can cream of chicken soup
4 cups of water
2 cups uncooked rice
1 tsp salt
2 tbs butter
1 cup cooked broccoli flowerets (which we actually leave out and serve separately since the girls have always picked out the broccoli anyway). 

Directions: 
1. Combine water, rice, salt, and butter in a pot. 
2. Bring to a boil. Turn heat to low and cover with lid. 
3. Allow to simmer for 15 minutes. Fluff the rice with a fork. 
4. Add soups, chicken, and broccoli. Stir to mix. 
5. Cover and heat on low for 5 minutes. Serve.
