House: Kitchen

One of my favorite rooms in our house is quickly becoming the kitchen. When we had so many family members living with us, I didn't spend a whole lot of time in the kitchen. There was just too many people, too much noise, and too much mess. Any time I tried to organize, it wouldn't last very long. So I was really excited to start cleaning and organizing after everyone moved into their own place.

When Johnny moved into the house in 2006, he redid the floor, added the bar, and replaced the counter tops. He also replaced the stove/oven with a stainless steel smooth top one. In 2014, we used my income tax refund to get a new stainless steel refrigerator to replace the smaller white one Johnny had. Then for Christmas in 2016, Johnny's son had bought him a Ninja coffee bar...and once everyone moved out, I was finally able to start using it to make Johnny's coffee in the mornings for him to take to work.

In February of this year, our washing machine and dishwasher both quit working. Luckily, it was almost time for our income tax refund...which was pretty big this year (last year we will be able to claim my oldest!). We were able to get the matching washing machine to the dryer we had to replace in December 2015. Then we found a stainless steel dishwasher that we loved. It had two adjustable racks and a third silverware rack. It's amazing how much better it works than the old one did even before it broke! We also found an over-the-range microwave to replace the old ivory-colored vent hood. They were all on sale (and because of a shipping issue, we were able to get all three appliances for an additional 10% off as well). We were going to replace the stove/oven too, but we decided to wait on that for now since it's still stainless steel. My OCD really likes that all of our appliances match now. ;)

The dishwasher was such a pain in the @$$ to install. We would've had to pay extra to have Lowe's contract with someone else to install it. I tend to be a very frugal person who only buys things when they're on sale and I really don't like paying for things that I could [probably] do myself. :P Well...halfway through installing the dishwasher I started wishing for a professional. LOL. But...after removing some of the tiles in front of the dishwasher (because our new one is quite a bit taller than the old one was), we finally got it to fit in the space...and then it was pretty straightforward getting it hooked up.

My brother-in-law installed the over-the-range microwave for us while Johnny was at work. He was a lifesaver! After all the work just getting the dishwasher in, it was so nice to have someone take care of the microwave for us. And he did a great job! We're loving the new microwave so much! And it has a second shelf so we can actually microwave multiple things if we need to. ;)

We also had an Amazon refund for an iPhone that we'd bought for Johnny and had to return. That meant we had quite a bit of Amazon credit to spend. So we used that to get a few more items for the kitchen as well. We got a new stainless steel color 4-slice toaster, toaster oven, and can opener. We also got some other small items...an under the sink organizer shelf, new air-tight canisters, a salt and pepper grinder, a spoon rest with lid holder, a separate lid organizer for the pots and pans, over-the-door cabinet storage bins, a knife organizer to fit in the drawer, a sponge organizer for the sink, and a storage tin for Johnny's bags of QT coffee grounds...just a few random things like that. Oh and we got a new Copper Chef electric skillet (because ours had rusted when everyone else was here), electric griddle, and a large stock pot to make chili and soups.

We also got a white cabinet (only color they had) that is my favorite of all the stuff we got. We needed more space for canned goods (one thing I do NOT like about our kitchen is that there is no pantry!) and Johnny wanted something enclosed rather than a plain over-the-door rack. So I found this cabinet on Amazon that slides into the door's hinges and we LOVE it. I did buy an expansion set with two more shelves, but it fits canned goods perfectly!

Around this same time, I'd also stopped by my grandma's house when she was in the mood to start handing stuff down. ;) I got a pressure cooker as well as an old Kitchen Aid stand mixer and food processor (which I don't think she ever even used). We've LOVED having them. It has really expanded my cooking options and made things a lot quicker. :) I made roast, potatoes, and carrots in the pressure cooker in less than two hours from start to finish (60 minutes in the pressure cooker after searing the meat). It was delicious!

The first thing I did after everyone moved out was organize the junk drawers in the kitchen. It's insane how much stuff accumulates when you're just randomly throwing stuff in there. So I tried to get it a little more organized so it'll be easier to actually find stuff when you need it.

After we got all the new stuff, I was really excited to finish getting the kitchen organized. Since we had to empty the cabinet under the sink in order to hook up the dishwasher, it was a perfect time to actually organize everything under there. A lot of junk collected down there as well. I don't think we even knew what all was under there before. :P I installed an adjustable shelf to make everything more easily accessible and take advantage of vertical space.

I also used some stacking white baskets that I'd bought years ago to organize the girls' odds and ends in their rooms...and used them to store all the crap that we've accumulated from take-out food: plastic silverware, straws, condiments, etc. It drives me crazy to just have all that stuff thrown into a drawer or plastic bags in a cabinet and forgotten about. This way they're right there and we can grab what we need or immediately put it away without it just being randomly piled on the counter until a home is found for it. It isn't the most attractive storage system just sitting on the corner of the bar...but it's the best I could think of at the moment. ;) 

Really the only thing I haven't gotten around to dealing with yet is all the stuff on the very top of the cabinets. It's all been there pretty much since Johnny moved in save for the sno-cone maker I bought back in 2002 that I threw up there. :P We never really use any of it and for the most part it just collects dust...but I don't know what else to do with it until Johnny decides what he wants to get rid of in the garage sale. ;)

Recipe: Mexican Cheese Soup

I try to make Mexican food on Tuesdays...you know...Taco Tuesday and all. ;) Tonight I'm making taco meat for tacos, burritos, or taco salads. But I was in the mood for a favorite of mine that my mom always used to make when I was in school: Mexican Cheese Soup. The recipe originally came from my grandma. Aubry and I love it, but Johnny thinks it's too much like the "dip" he used to make so he doesn't like it on principle. LOL. And Ashlyn is just picky and doesn't like a lot of things. :P

But...if anyone else loves Velveeta cheese, a little bit of "spicy" (but not much), and soup...it's very yummy!


Mexican Cheese Soup 

Ingredients:
2 lbs ground beef
2 16oz cans pinto beans
2 15oz cans Rotelle
2 16oz cans whole kernel corn
32oz Velveeta Cheese
Fritos Corn Chips 

Directions:
1. Brown hamburger. Drain. Add to crockpot.
2. Add corn, Ro-Tel, and pinto beans (do not drain! this is what makes it a soup).
3. Cube a block of Velveeta Cheese and add to crockpot.
4. Cook on low for 2-3 hours, stirring often.
5. Serve with Fritos corn chips. 

I've recently started eating it with crumbled cornbread instead of Fritos and it's pretty yummy as well! Gives it a little bit of a different flavor if you want some mild "sweet" taste to it. :)

Happily Ever After

Since it's our anniversary, I thought it'd be the perfect time to tell the story of us. :)

Johnny and I met when we were working at a data entry center for the post office. We started dating on June 28, 2005. Back then, we had a much different relationship. I was in the middle of a messy divorce and he was coming off of his own bad break-up. We kept our relationship separate from everything else in our lives. We didn't go to each other's homes or bring each other around our kids. We just hung out after work and talked for hours. With everything that was going on in our lives at the time, it was nice to have someone there to lean on. And the more I got to know him, the more I fell in love with him.

I'd never been with someone I had so much in common with. From our views about relationships and parenting to opinions about religion and politics...we were so alike in so many ways. I finally understood what it felt like to find your other half. It was like Johnny was a piece of my soul that I'd never known was missing until he came along. I truly believe he is my soulmate.

At a time when our lives were already so chaotic, it became more and more difficult to find time to see each other. We'd both been offered a career position at work in September, but I was unable to take it because the job required flexible hours and I just couldn't do that while I was in the middle of a custody dispute. But it meant Johnny was working a different shift than I was, so we weren't able to see each other at work anymore. And with his second job and our family obligations, there just weren't enough hours in the day to spend with each other. We went our separate ways in October and we fell out of touch after I stopped working for the post office in December 2005.

Johnny and I didn't actually speak to each other again until I looked him up on Facebook one day in the summer of 2009. We were both in other relationships at the time, but we enjoyed chatting as friends. We didn't see each other again until June 6, 2012 and it felt as though no time had passed at all. We were still just as much in love as we'd always been. We started dating again in August 2012.

Our relationship is unlike any we've ever had before. There is no bickering over trivial things. I can count on one hand the number of actual arguments we've had in the last seven years. We just make it a point to truly be nice to each other...which is surprisingly overlooked in a lot of relationships. You get caught up in the things going on around you or allow yourself to become resentful about things and the niceties tend to not be a priority. But even after all this time, Johnny and I still hold hands everywhere we go. We say "I love you" in nearly every text message we send to each other. We say please and thank you and we always try to help each other. We don't tell each other what to do and we try to be appreciative. It's just a very loving relationship where both of us are committed to making it last forever. And he truly makes me happier than I've ever been. We can be doing absolutely nothing at all except sitting in front of the TV watching our favorite show in our pajama pants...and there's nowhere else I'd rather be. 

Johnny also has a wonderful relationship with my daughters. I couldn't have chosen a better man to be their stepdad. The best gift Johnny has ever given me is the wonderful example we set for my kids. They can see what a good relationship looks like...where two people love, respect, and never give up on each other. He also tends to be the "good cop" to my "bad cop" so it balances out the girls' lives a little bit. ;) They love to hang out with Johnny and they have fun telling jokes and being silly. 

We were married on our fifth anniversary in August 2017. We had a beautiful wedding at the lake where we spent a lot of time together back in 2005. We wanted something small but meaningful...a special day to celebrate with our family.

Our wedding party consisted of my daughters as bridesmaids, my nieces as flower girls, and Johnny's son and step-son as his groomsmen (Johnny's daughter and her family were living out of town at the time and couldn't make it). It was a short, relaxed ceremony officiated by my sister (pictured next to Johnny...and ordained by the Universal Life Church) followed by a pot luck reception. My cousin took photos for us and helped my mom and sister with hair and make-up. 

We had a peacock theme in jewel tone colors. Aside from the cake, we did everything ourselves. We already had the arch and some of the supplies from previous weddings. We purchased the rest of the supplies on sale (and with coupons) from Michaels and Hobby Lobby. The girls and I found our dresses at Ross Dress for Less (all three for about $50 total!) as well as the mosaic vases. Johnny's pants, shirt, and tie came from Kohls (yay for Kohls cash!) and we just asked the groomsmen to wear black pants and a white button-up shirt. It was a beautiful wedding that we put together for less than $1000.

Everything came together beautifully. We played "Everything I Do" by Bryan Adams at the beginning of the ceremony as I walked in. I wanted an 80's love ballad...but 1991 is close enough, right? ;) My sister and I wrote up the ceremony ourselves to be unique to me and Johnny. We had also had a sand ceremony with my daughter's and Johnny's son and step-son as "Overjoyed" by Matchbox 20 played in the background. Rob Thomas and Matchbox 20 have always had a special place in our relationship... and we've seen him in concert together twice. :) So picking that song was easy. And immediately after our wedding ceremony, we took pictures with all our guests and enjoyed a potluck dinner and yummy cake. It was nice being able to casually chat with everyone...and the air-conditioning was definitely a must because it was a typical HOT August day in Kansas. 

It was one of the very best days of my life and I'm still so excited to be married to my best friend. I look forward to every single day I get to spend with the love of my life...my husband. :)

First Day of School 2019-2020!

I can't believe I have a Freshman and a Senior this year! I hope they have a WONDERFUL year! :)


This girl...I can't believe she is a SENIOR! The time has gone by so dang fast. Here's a comparison picture...first day of her first year and first day of her last year.



And Ashlyn actually started the day before so the Freshman and new students could acclimate to the new building. Of course I took pictures then, too. :)

Back to School!

I can't believe that school is about to start again. The summer went by so very fast. I'm ready, though. I enjoy the routine of the school year. I like having some relatively quiet time to work and just enjoy a few hours of the day without the constant bickering of teenage daughters. :P

For only the second time in their entire school careers, both girls will be in the same school. I'm still in a little bit of disbelief that I'll have a freshman and a senior this year. I still vividly remember my own high school years like it was yesterday...so it's almost alarming to realize just how long ago that was now. I mean...my 20 year high school year reunion is the same year my child graduates! How weird is that?!

But...all the craziness aside, we're pretty much ready for the first day of school except for a new book bag for Ashlyn. She wants a bigger bag to hold her new binder and all her stuff. I ordered their school supplies using Walmart Grocery so I could just pick it up in the morning before Johnny went to work. Now that the kids are in high school, they need a not less in terms of supplies. Some paper, pencils, pens, highlighters...that's about it. Aubry wanted to use the same bag and binder as last year because they worked really well. Ashlyn picked out a new binder on Amazon...so again, I didn't have to go anywhere. LOL.

Then on Saturday, we went school clothes and shoe shopping. We got all their clothes at Kohl's. I love that you can stack coupons and Kohl's cash...so we saved a lot! We also got more Kohl's cash for the purchase, so that's always nice. And then we went to Famous Footwear to get their shoes. They each got a pair of shoes on clearance and then a pair of tennis shoes. They were having their BOGO 1/2 off sale (which included clearance items) AND we got 15% off on top of that. And with their rewards program, I also ended up with $25 in rewards...which I put toward getting me and Johnny a pair of new shoes (also BOGO 1/2 price and 15% off) which we decided on as anniversary presents to each other. ;)

So...here's to a good 2019-2020 school year! :)

Work, work, work!

I've been busy with work a lot lately. I'm starting to get into the "groove" with my new job. It does feel like there's quite a bit of pressure still. A lot of it is trying to choose the right files. But...I am absolutely LOVING the actual work.

I've also decided that I will be devoting just weekdays to transcription work. I'll try to get the bulk of my work done during the day while the kids are at school and then leave the evenings for dinner and time with my family. I also want to try to make sure that I don't leave work for the weekend. That way if we have any plans over the weekend, I'll be free. But also, I want to have time on the weekends to focus on things for myself when we don't have anything else to do. I want to be able to devote some time to reading, writing, art, and other projects when we don't have anything else going on. Even time to relax and watch TV with my husband or play games or whatever...just to avoid getting burnt out.

ALSO... some exciting news!

Aubry got her first payroll job! She has worked for several years now... helping Johnny with his swimming pool service and maintenance business, babysitting, and doing yard work and helping grandparents with things around the house. But she has filled out a few applications in the last couple weeks, and she got her first interview this week. She was hired on the spot and started work the next day! She is working at a Japanese restaurant as dishwasher and frying appetizers. So far, she's really liking it. It is taking some getting used to though...as far as working seven hours on her feet. But she definitely loves that she has the opportunity for free Hibachi for dinner. ;) Her goal is to save up enough for her own car.

So it's been an exciting end to the summer here. :)
