Recipe: Mexican Bow Ties

This is based on a recipe I found online way back in 2002. This recipe makes quite a lot...so it's an easy recipe that is good for a group gathering. Also, some people prefer to leave the sour cream/salsa mixture separate in case someone doesn't want it on their helping...so that's a simple option too. :)

Mexican Bow Ties 
Ingredients:
2lbs ground beef
16oz bow tie pasta, prepared according to pkg 
1 pkg taco seasoning
2 cans pinto beans, drained
2 cans Ro-Tel, undrained
1 can whole kernel corn
2 cups shredded colby jack cheese
1 cup sour cream 
1/2 cup salsa 

Directions: 
Brown hamburger and drain. Return to pan. 
Add taco seasoning, beans, Ro-Tel, and corn. Mix well. Heat on low for about 15 minutes. 
In a large bowl, combine pasta, meat mixture, and shredded cheese. 
In a small bowl, combine sour cream and salsa. Add to pasta mixture and stir well. 
Garnish with more cheese and tortilla chips, if desired.
